Classes
"Tianguis to Table" - Wednesday Market
Every Wednesday AbueLinda takes a class on a walk through Ajijic's weekly open air market, called the tianguis (tee-ang-geez). Participants will start the class by learning how to choose local fruits and vegetables, then return to the kitchen and learn how to cook them, and then enjoy the fresh-cooked flavors.
"Monday at Chapala Market"
Explore Chapala’s tianguis with its Mexican flavors and ingredients. We’ll broaden our taste buds, shop and eat local food. A mouth-watering experience that will surely be the first of many visits.

"Frijoles"
Beans, beans and Salsas: More than 200 varieties given by Mexico. Today we will sample popular varieties: Peruano and Flor de Mayo (Jalisco) and Negro (southeast Mexico). The class will showcase three versions including soup. Three salsas will change boring beans into exciting meals!
"Soups and Sopes"
Pozole, a delicious regional soup/stew with hominy and melt-in-your-mouth pork chunks, with a balanced seasoning. Accompanied with tostadas and lots of garnishes!
"Travel Mexico Menu Ideas"
Travel Mexico without leaving Jalisco
Veracruz: Pescado a la Veracruzana: A rich tomato based sauce complimented with olives, capers and macerated raisins compliments our freshest white fish. This dish is one that marries old world ingredients with Mexico’s distinguished global contribution: tomatoes!
Chiapas: Pollo Encacahuatado: a rich, roasted peanut mole highlighting chile de arbol and simple spices. Easy to duplicate back “home
Regional Mexico: A truly traditional class featuring local Jalisco Beef Birria, refried beans, and red rice. Taught hands-on by AbueLinda's sous chef, from the recipe taught to her by her mother.
Puebla: Chile en Nogada - Chile poblano stuffed with a mix of meats and ingredients from the old and new world

Looking for ingredients that you can't find at Lakeside or planning a big party???
Hire AbueLinda to accompany you to Mercado de Abastos (Mexico's 2nd largest distribution center!) for national and imported produce, meats, spices, cheese and food galore!

"Sunday in Cajititlan"
A Sunday afternoon event. Let me help you enjoy the nearby destination of Cajititlan where we'll savor some of their local delicacies which include quail and gorditas. We'll be the only ones there speaking a foreign language! Experience the town, Lake Cajititlan, and an endless taste of local treats. A great way to spend 4 hours on a Sunday.

"Scenic Tour of La Manzanilla de La Paz"
8:30 a.m. departure from Ajijic for a scenic 1.5 hour drive to La Manzanilla de la Paz. Arrive approximately 9:45 for a quick pick-me-up of pork confit with hand-made tortillas. The tour to this picturesque, colonial village includes a visit through the hotel reminiscent of the old west, to the Virgen of the Laja (virgin of the rock), the ornate church, an artisianal factory for cheese and preserves, and a leather goods shop that employs an unusual tooling technique. We’ll also explore the natural dam nestled in the village – a 10 minute leisurely walk.
On the way back, we will stop in Concepcion de Buenos Aires for a late lunch at the renowned Tio Luca’s Restaurant. After this delightful, culinary lunch with specialty ponches, we estimate a 1.5 hour return trip to Ajijic.
Introductory Offer-$1300 pesos per person (does not include lunch). Price is based on a minimum of 4 people
